SALSA DI ZUCCHINE, LIMONE E MENTA (zucchini, lemon zest and mint, sauce for pasta)
200 grams of fresh zucchini cut into thin slices
10 ml oil
1 lemon zest
1 medium garlic clove thin cut
2 mint leaves
salt and pepper to taste
Warm the oil with garlic and salt in a large pan.
When the garlic start frying add the zucchini and lightly roast them for bout 10 minutes.
Add pepper to taste, the grated lemon zest and mint cut into thin slices.
Add half glass of hot water in the pan (would be better to use some of the water in which you are cooking the pasta because of it’s content in starch) and bring to the boil to get a thicker sauce.
Use this sauce for pasta and, if you like you can put some cheese on top before eating.
