stuffed zucchini flowers

Zucchini flowers are beautiful and sooo good when cooked in many different way and, who’s a little expert of vegetable garden knows than when is their period they could be a thousand and even more…..So we need to do something with those beauties, I’m suggesting now an easy recipe that requires really few ingredients that we love here in Tuscany:
Flowers, ricotta cheese, Anchovies in oil and few more basics…
Clean the flower and cut a side lengthwise, put inside a spoon of ricotta and half anchovie fillet, re-close the flower and put it onto a baking tin, season with oil, very little salt and if you like, some oregano and, way not, some fine bred crumbs on top.
Cook in a moderate oven (180°C) until they turn a little golden….now you can taste the summer delice……
